Use the Kitchen selector in the top bar of the admin. Choose a kitchen to limit every report to orders (and menus) assigned to that kitchen, or Global View to combine all kitchens. The report header's eyebrow shows which one is active: the kitchen name, or All Kitchens in Global View.

The choice affects more than filtering: on the Inventory Shopping List the Stock column is edited inline for the selected kitchen, whereas in Global View it opens an Edit Stock modal with one row per kitchen; and retail-location stock is only added for the kitchen that owns those locations.
