Quantity Needed is only a production order. On-hand stock (Quantity in Stock) changes when you click Update Stock (all lines) or the per-line Update Stock button, when a CSV upload is applied with Deduct as Sold, or through orders and manual movements. A -- means the location has never received stock for that meal/portion (or it is exactly 0). Click Update Stock once the meals have been delivered to the location; the column and Last Stock Update then fill in.
