Stock is stored per kitchen location, so the form only offers a plain Stock number when a location is selected in the header. Without a location, Sprwt shows the total and an Edit link that opens the per-location pop-up, and this link is only available on ingredients that were already saved (a new, unsaved ingredient has nothing to attach stock to). If you see no Stock field at all, your plan is below Base and the Ingredients Stock module is not enabled. Editing also needs the Edit Ingredients permission; the pop-up reports "Invalid Permission!" otherwise.
