The time you set has to fall inside one of the store's configured Real Time availability windows for that weekday (plus a configurable buffer before the window opens); picking something outside those windows is rejected, and the ordering page's default time is rounded forward to the next valid slot. Checkout itself blocks completion if the order time isn't currently valid for that day.
