List Customers is the permission that actually gates access in the current code — an employee needs it to open the customer picker/search from the terminal's navigation menu. "Edit Customers" is offered as a separate toggle in the employee-profile permission editor, but in the current version it doesn't gate anything: saving a customer's details, allergens, dislikes, or cards from inside the terminal works for anyone who can already open the customer view. (Creating a brand-new customer record checks the general "Edit Customers" admin permission used elsewhere in Sprwt, not this POS-specific toggle.)
