All on the Order: Subscription tab:

• Module Subscription: Title, Modules Subscription: Description and Module Subscription: Subtitle — page and menu texts (the field labels are inconsistent between "Module" and "Modules" in the current version, but they're the ones you want).
• Meal Plan: Portion Size per Category — enables Custom (per-category portion) plans.
• Subscription Start Date Buffer Period (in weeks) — how far ahead a start date may be.
• Auto Renew Default and Client can set Auto Renew on new Subscription? — default renewal mode and whether the customer can change it.
• Client can select meals?, Meal Plan: Allow Random Meals, Meal Plan: Allow Extra Meals, Meal Plan: Allow Portions Upgrade, Allow AutoChoose Included Surcharge Meals? — meal-selection behaviour.
• Choose Plan - Show Overview, Active Subscription Warning Popup, Show Subscription Cancel Reasons, Show Subscription Pause Reasons, Client skip Settings, Client Renew Subscription Settings, Client Renew Subscription: Use Digital Balance when renewing?.

They are store-wide; the per-plan toggles (Auto Select Meals, Allow Modify Meals, Hide Entire Plan from Customer) refine them per plan.
