Each acknowledgement is stored as its own row: which user, which kitchen (for multi-location accounts), which Terms & Conditions version, their IP address, browser user agent, and a timestamp — one row per user per terms revision. Re-accepting an already-accepted version is a no-op that keeps the original timestamp.
