Open the Preferences tab and click Edit on the Shipping Address card. You can set Street Address, Apt/Unit/Suite, City, State (which also constrains the Zip Code format), Zip Code, Phone, Gate Code, a specific Transporter override (or "--Use default--"), and Delivery Notes.
