Event meal categories (managed under Catering > Proposal Settings > Meals Categories, e.g. Appetizers, Dinner, Dessert) let you group proposal meals into courses. When you assign meals to a category, a Timetable card appears on the proposal where you can enter a Start Time for each category (and, for On Site events, tick Has Ceremony? and enter the Ceremony Start Time). The customer-facing proposal, the printed PDF and the Banquet Event Order then show each course with a Starting At hh:mm badge. Category times are copied when you clone a proposal.
