It is your business contact address: it appears in the site footer and top bar (with the optional Show Text with Email in Footer label), is inserted into templates where `@client_email` is used, and receives admin notification emails such as customer subscription cancellations. When you first set it, Sprwt also uses it as the default Stripe contact email if none was set. It is not the sender of system emails — that is System Email - Email Address From.
