Under Totals, the Profits Margin block shows your estimated margin: Meals = meal revenue minus the production cost of each meal/portion × quantity (hidden when Price Per Person is on), and Labor & Equipment = expense revenue minus (quantity × hours × the item's cost per hour), shown when the Expenses module is set to appear on proposals. A more detailed cost breakdown (Item, Portion, Qty, Revenue, Cost, Profit / unit, Total Profit; and Qty × Hrs, Unit Revenue/Cost, Line Revenue/Profit for labor) is available on the proposal for internal use. These figures are never shown to the customer.
