It controls how the category filters on your customer menus combine when a shopper ticks several categories (A la Carte, Catering, Realtime and similar menus):

• Default – categories inside the same group are OR-ed and groups are AND-ed ("A or B" and "1 or 2").
• OR – a meal matches if it has any selected category ("A or B or 1 or 2").
• AND – a meal must have every selected category ("A and B and 1 and 2").

The same rule is used by the auto-selection job for subscriptions.
