Quantity Needed is the number of units of that meal and portion the kitchen must produce and deliver to this location for the selected date - it is the location's production order, not its on-hand stock. Click the number in the Quantity Needed column, type the new value in the Set Quantity to Produce box and press Enter; negative values are stored as 0. The Meals for Today card sums this column. Quantity Needed feeds the Retail Dropoff Report (what to deliver to each point) and is what Update Stock pushes into the location's on-hand stock once the meals have been delivered. It can also be set in bulk with Update Stock with AI.
