Tab: Business > General. Options: Pickup / Delivery (default Delivery).

When a new cart is created and both pickup and delivery are enabled, this is the method the cart starts with. A customer's own saved preference (their preferred shipping method on their profile) takes priority over this default; the customer can also switch methods in the cart. If only one method is allowed, that method is used regardless of this setting.
