They are informational badges taken from the recipe: Premium and Custom show when the recipe has those flags, and their labels come from Business: Website > Premium Badge - Title / Custom Badge - Title. Gluten free shows when the recipe's ingredients contain no gluten allergen, and Allergens free when they contain no allergens at all — but in the current version both of those only appear if a gluten-free calculation setting is turned on for your account (this isn't currently exposed as a toggle on the Client Config pages, so contact Sprwt support if you expect to see these badges and don't), and Allergens free additionally needs the Allergens & Dislikes module. They help you balance a menu at a glance but do not affect ordering.
