The hero strip on Catering > Events summarises your proposals by status (count and total):

• Active Events – every proposal in New, Sent, Signed and Approved, Rejected, Fully Paid, Partially Paid or Past Due (i.e. everything not Completed/Archived).
• Proposals Sent – all proposals that have been sent (Sent, Signed and Approved, Rejected, Fully Paid, Partially Paid, Past Due).
• Confirmed – Signed and Approved, Fully Paid, Partially Paid and Past Due.
• Balance Owed – the outstanding amount across Signed and Approved, Partially Paid and Past Due proposals (expected totals minus recorded payments).
• Completed – in the current version this tile's count and total actually come from proposals in the Fully Paid status, not from proposals whose Status is set to Completed. The pipeline bar underneath has its own, correctly-wired "Completed" step that does count the actual Completed status.

Below the hero strip, the pipeline bar (All Events, New Lead, Proposal Sent, Proposal Signed, Payments Collected, Past Due, Completed, Rejected, Archived) filters the table by status when you click a stage.
