What do the 'Measure / portion (Trimmed)' and 'Total (Trimmed)' columns mean on the Cooking Report?
Measure / portion (Trimmed) is the recipe quantity of the ingredient for one unit of each portion size, already inflated by the ingredient's Trim/Shrinkage %. When a meal was ordered in several portion sizes you get one line per size (e.g. Small: 120 gr, Large: 180 gr). Total (Trimmed) is that measure multiplied by the number of units ordered for every portion, i.e. the amount the chef must actually weigh out. When a trim applies, the untrimmed figure is shown in parentheses so you can see both.
