Each card carries a time state that is recalculated every minute from the promised order time:

• On time — the promised time is still in the future.
• Past overdue — the promised time passed less than 10 minutes ago.
• Most overdue — more than 10 minutes late.

The card header is also styled by the order status (New, Processing, Ready, Waiting). Together they let the kitchen spot late orders at a glance. The countdown text drops to "0 mins" once the time has passed.
