They're the exact same underlying settings as Allow Pickups / Allow Delivery / Allow Venues on Catering Settings' Proposals tab — both editors write to the same three values. On the general order-settings page they're labeled "Catering: Show Pickup on Proposals", "Catering: Show Delivery on Proposals" (Order: Catering tab), and "Catering: Show Venues on Proposals" (Order: Venues tab), and they control whether that fulfilment option is offered on a proposal — independent from whether pickup/delivery/venues are offered on the regular meal-ordering site.
