Ordering for an upcoming delivery date closes automatically once its cutoff passes, based on two settings: how many days ahead of the delivery date ordering closes, and what time of day it closes. Both can be set as a single value for every day of the week, or as seven separate values — one per weekday — so you can, for example, close orders further in advance on your busiest day.

The automation checks the current time against that day's cutoff and only closes ordering once the cutoff has actually passed — so running it early in the day is simply a no-op until the cutoff time arrives.
