It's the customer's selected diet/meal categories (e.g. Vegan, Keto, etc. — whatever categories you've configured). The Search Type dropdown controls how those selections are combined when filtering meals for them: "OR" shows meals matching any one of the selected categories, "AND" shows only meals matching every selected category.
