Usually one of three things: trim – ingredients with a Trim/Shrinkage % are inflated (quantity ÷ (1 − trim%)) and the untrimmed number is shown in brackets; retail stock – in the Meal Prep view the stock you set for active retail locations on that menu date is added to customer orders (look for Retail… entries on the Meals Report); or sub-recipe scaling – component quantities are derived from the sub-recipe's Base Weight, so a wrong Base Weight multiplies everything under it. Check the ingredient's Trim/Shrinkage % and Base Weight and the retail menu stock.
