Total Gross Sales is the sum of three blocks, all based on item subtotals before discounts for orders placed in the range:

1. Gross Meal Prep Sales – online meal-prep ordering modules: Meal Packs, Subscription Creation & Renewals, Subscription Upsells, A La Carte (excluding wholesale orders), Custom Meals, Gift Cards, By the Pound, Extras, etc. Proposal-based orders are excluded here.
2. Gross Catering Sales – Online Catering Orders (Catering Meals ordered online) plus Proposals & Invoices (Meals, Invoice Items, Custom Meal Builder, Labor & Equipment on proposal/invoice orders) plus Partial payments received on proposals that were only partly paid.
3. Total Retail Sales – Wholesale, Grab And Go (Retail), POS Menu, Custom Charge and Real-Time orders.
