Sorting order is a number on each extra and product. On the customer pages items are listed by this number from highest to lowest, then active first, then alphabetically - so give featured items a higher number. Items you leave at 0 come last among positive-numbered items. The admin list has its own Sort by dropdown (A-Z, Z-A, price) and ignores this number.
