By default a meal's allergens and dislikes are the union of the allergens and dislikes flagged on its ingredients and sub-recipes (customers with matching profile allergens are blocked from those meals). To override this, switch on Use Manual Allergens & Dislikes? and choose from the Allergens and Dislikes multi-selects that appear (use Add more Allergens / Add more Dislikes to open the allergen/dislike category pages and create new ones). The manual lists are then used on the website, in the admin list and on labels.

When the gluten-free calculation is enabled for your account, meals whose ingredients carry no gluten allergen get a Gluten free tag, and (with the Allergens & Dislikes module) meals with no allergen at all get an Allergens free tag.
