The Categories multi-select groups every meal category by its category group (e.g. Type, Diet); pick as many as apply. They drive storefront filtering, the letters/colours shown on meal cards, label tags and the AI generator.

When the POS module is enabled a separate Primary Category dropdown appears: this single POS category decides where the meal is listed on the POS terminal.
