On Kitchen > Preset Menus click the trash icon in the row's Actions column. The preset and its meal list are deleted immediately (both the presetmenus row and every presetmenus_meals row are removed) and you return to the list with a success flag - there is no undo, so make sure it is the right row. Deleting a preset never changes the menus of dates that were built from it.
