When your account has more than one active kitchen location, the storefront shows a kitchen-select bar; its dropdown only lists kitchens that have Allow customers to select this kitchen switched on. A visitor's choice is remembered for their session, and if none is set yet, it can fall back to the resellerId saved on a logged-in customer's profile. If you have only one active kitchen, the bar never shows and that kitchen is used automatically. To keep a specific kitchen out of the dropdown without deactivating it, untick Allow customers to select this kitchen on that kitchen — but note the bar itself is only fully hidden once you're down to one active kitchen; simply removing every kitchen's public flag while keeping two or more active still shows an empty-looking bar. In the current version this styling is driven by an internal theme setting ("Client Menu Kitchen Select") that is not exposed as an editable field in Client Config, so it isn't self-serve.
