Does the catering menu group meals into categories for customers, or show one flat list?
That's controlled by Catering: Display menu by category (Theme: Kitchen config tab, on by default). Turned on, the customer-facing catering menu is split into category sections; turned off, all of the day's meals show together in one flat grid.
