The admin menu page opens any delivery date, including closed (orange) and finished (red) ones, and Select Meals For this day, Clear, presets and random generation all work on them — none of the save/delete/clear endpoints check the date's open/closed/finished flags. Customers, however, cannot order a closed or finished date regardless of its menu. Cloning treats these dates differently: they are skipped as targets (except on Catering), but a closed or finished date can still be the source you clone from, since the source date is simply whatever date the menu page is open to.
